The olives are harvested by hand while still green, 15 days in advance, to the detriment of yield but to the advantage of the organoleptic characteristics of the oil, in fact in this way a greater richness of polyphenols is maintained.

Our 4,900-acre farm is situated along the lower reaches of the Breede River between Malgas and Cape Infanta and borders on the De Hoop Nature Reserve. The area has a typical Mediterranean climate that combined with the soil type is perfectly suited to cultivation and growing of healthy olive trees. Nine different cultivars of imported olive trees covers 815 acres.
