Hermus is the mythological name of the Gediz Plain, which has been a cradle to many civilizations throughout its history. Our story started with the introduction of a Spanish olive variety “Arbequina” in 2008, unlike traditional narratives. Utilizing a cold pressed method, we aim to capture the fruitiness of our olives, the flavor, and overall healthy properties.

Fermes Ali Sfar is a family company found in 1970 specializing in growing, cultivating, and producing organic agricultural products. Fermes Ali Sfar also specializes in raising cattle, sheep, and poultry humanely. Our practices are in accordance with all standards and regulations required and set forth by the certifying bodies.

It is in the heart of the magnificent plains of the Fez region, renowned for its ancestral olive culture, that the Noor Fès estate extends. A source of pure and limpid mineral water streams along our orchard, enjoying an exceptional micro climate and creating the perfect conditions for the growth of plentiful and fruitful olive trees.

This olive oil is extracted only from olives cultivated in our own well-cared for orchard, and few orchards in partnership under the supervision of our Agricultural team. Only a short time passes from harvest until the olives are pressed, packed, and stored under optimal temperatures and humidity to reach you – the final customer.

This is a cold-extracted extra virgin olive oil made from olives hand picked on our family farm in Umbria, the “green heart of Italy.” We have 1,000 trees, most of which are 400 years old, making our oil a heritage blend. This blend is made up of different olive cultivars, the majority being frantoio, for fruity fragrance; leccino for peppery spice; moraiolo for a touch of bitterness; and pendolino for earthy smoothness.

The Estepa Designation of Origin is one of the most demanding entities in the market when it comes to certifying the quality of an Extra Virgin Olive Oil. The oils protected by Estepa are produced in the Estepa and Puente Genil region, and are currently one of the most awarded.

Our family has always lived in this area of Sicily and the company has always been run by women in love with their land, traditions … and especially the family.
