Vassae is a distinctive multivarietal Extra Virgin Olive Oil produced exclusively by our family. The complex character of Vassae is due to the different varieties we grow. All of them have a particularly rich taste thanks to the high altitude of our olive grove, the great biodiversity of the terrain and the microclimate.

The early harvest extra virgin olive oil from Jaén Oro en Rama comes exclusively from olive groves of the picual variety of our centenary farms. This EVOO is obtained from olives selected at their optimum point of maturity and harvested during the month of October, following a traditional process with which we obtain a ‘premium’ green oil of the highest quality.

Ever since the Etruscans introduced it into our countryside, together with grapevines and wheat, the olive tree has been an integral part of the Umbrian landscape, marked by the alternation of vines and olive trees, from which one of the best extra virgin olive oils in Italy comes.
